Lawrence Stiff/Coarse Wiping Canvas is an open weave cotton fabric that has been stiffened with starch. In order to prepare it for wiping you need to 'break in' the canvas - you can do this by pulling it out diagonally to the weave or running around a table leg an pulling from side to side. You will then be able to form the tight pad you need for wiping yor plate.
